Creme de Cassis Cupcake

I added two tablespoons of creme de cassis to the cupcake batter (the golden cupcake recipe in VCTOW made following the oil variation but with 1/4 cup oil instead of 1/3 cup) along with a tablespoon of de-seeded blackberry jam to get these delicious cupcakes that are sweet but tangy and a little bit rich, especially with the topping, which I am in love with. I made it with a bit of soy whipping cream and some blackberry extract and it came out really wonderfully. The cream has such depth to its flavor…I couldn’t believe it. I definitely haven’t tasted anything like it since I’ve been vegan. The sauce I dripped over it is a mix of blackberry jam and creme de cassis.
