Recipe for Koftas

Ingredients (for 4 people)

For koftas

- 1 lb. of ground beef
- 1.5 onion, chopped
- 1 large egg
- 1 rounded teaspoon of garam masala
- 1 tablespoon of ground dry ginger
- 1 tablespoon of ground chili pepper
- 4 tablespoons of chopped fresh cilantro (reserve one tablespoon for garnish before serving)
- 1 hot green pepper, finely chopped (optional)
- Salt and pepper

For the sauce

- 2 onions, finely chopped
- 3 garlic cloves, chopped
- 1 piece of fresh ginger, chopped
- 2 teaspoons of turmeric
- 2 teaspoons of ground cumin
- 2 teaspoons of ground chili pepper
- 3 teaspoons of garam masala
- 1 hot green pepper, finely chopped (optional)
- 1.5 cup of tomato sauce
- 1 lb. of peeled chopped tomatoes
- 1 cup of yogurt (can be replaced with plain soy yogurt or plain soy cream)
- Neutral oil
- Salt and pepper


Mix all koftas ingredients and form small balls the size of walnuts. Place on a baking sheet. Refrigerate about 30 minutes.
Sauté onion in hot oil without browning. Add garlic, ginger, chili and spices and stir 2 to 3 minutes. Enter the meatballs in this preparation so that they are golden on all sides.
Add the tomato sauce and peeled chopped tomatoes, salt and pepper, and cook over medium heat for about 25 minutes.
Then lower heat to low and continue cooking for about 5 minutes, adding the yogurt.
Serve meatballs covered with sauce and sprinkle chopped fresh cilantro on top.

Recipe for Saffron rice(for 4 people)


- 1.25 cup of basmati rice
- 1 large onion, chopped
- 1 tablespoon of neutral oil
- 0.2 g of saffron (or saffron powder)
- 2 teaspoons of cumin seeds
- Salt and pepper


In hot oil, sweat the onion without browning. When translucent, add the saffron and cumin seeds and stir for a minute.
Add rice (rinsed beforehand) and stir for 2-3 minutes until the rice absorbs the oil and take a yellow color.
Moisten with water (not quite up to the three quarters of rice height). Add salt. Bring to a boil then reduce heat to low / medium and cook covered as tightly as possible for about 20 minutes
