Cinnamon Swirl Banana Bread

Ingredients:

Banana Bread:
  • 3 very ripe bananas, smashed up
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/8 tsp ground cloves
  • 1/8 tsp nutmeg
  • Pinch of salt

Cinnamon Layer:

  • 1/3 cup sugar
  • 1 tbsp cinnamon

Directions:

  1. Preheat the oven to 350 degrees. Coat a small loaf pan with cooking spray.
  2. Mix the mashed bananas, butter, sugar, egg, and vanilla together with a beater until creamy
  3. Combine the flour, baking soda, cinnamon, cloves, nutmeg, and salt together in a separate bowl then mix well. Gently add the flour mixture into the banana mixture until just combined. Don't over mix.
  4. Mix together the 1/3 cup sugar and 1 tablespoon of cinnamon.
  5. Add half of the batter to the loaf pan and then sprinkle more than half of the cinnamon-sugar mixture all over the batter in the pan. Add the rest of the batter, and then sprinkle the leftover cinnamon-sugar on top.
  6. Bake for 55-65 minutes, or until a tester inserted into the center comes out clean. Remove from the oven then let it cool for a few minutes before transferring to a cooling rack to finish cooling. Slice and serve with butter if desired. Enjoy.
